Mediterranean Sautéed Free Range Chicken

- 2 lb. free range chicken
- 1/3 cup oil
- 1 cup tomato sauce
- 1/2 cup red wine
- 2 artichokes
- 8 fingerling potatoes
- 12 black olives
- 2 tsp tarragon
- In a sauté pan heat the oil and brown the chicken, add the wine and tomato sauce, cover and simmer for 45 minutes.
- Clean and trim the artichokes and remove the core.
- Sauté the potatoes for 10 minutes.
- Add the potatoes, the artichokes and the olives and cook for another 20 minutes.
- Sprinkle with tarragon just before serving.
