Mediterranean Sautéed Free Range Chicken

Ingredients

  • 2 lb. free range chicken
  • 1/3 cup oil
  • 1 cup tomato sauce
  • 1/2 cup red wine
  • 2 artichokes
  • 8 fingerling potatoes
  • 12 black olives
  • 2 tsp tarragon

Directions

  1. In a sauté pan heat the oil and brown the chicken, add the wine and tomato sauce, cover and simmer for 45 minutes.
  2. Clean and trim the artichokes and remove the core.
  3. Sauté the potatoes for 10 minutes.
  4. Add the potatoes, the artichokes and the olives and cook for another 20 minutes.
  5. Sprinkle with tarragon just before serving.
